The Best Vegan Caesar Salad Dressing

This dressing soooo thick and creamy and delicious. Also great as a dip or used as spread on sandwiches or wraps. Quick and easy to make and made with common ingredients you probably already have on hand.
Makes about 1 ½ cups of dressing
You will need:
½ cup raw cashews soaked for at least a few hours (overnight for best results)
1/3 cup of water
3 tbsp of lemon juice
1 tbsp Dijon mustard
1 tsp tahini
1-2 cloves of garlic
½ tsp garlic powder
2 tsp malt vinager
1 tsp soy sauce
1 medium or large dill pickle
2 tbsp extra virgin olive oil (optional)
½ tsp salt and pepper (or to taste)
For the salad:
-Any type of lettuce (for this recipe I love using romain or kale)
-Chopped red onion, vegan parm, vegan croutons, roasted chickpeas and/or whatever else you love in your salads
1. Put everything in a food processor or high speed blender and blend until smooth.
2. Enjoy right away over romain or your favorite lettuce. Will store in fridge for 3-4 days.
